Una vez instalaste Ubuntu te va a aparecer siempre por defecto en el menu de arranque linux, pero si queres que aparesca windows o cualquier SO que uses tenes que hacer lo siguiente:
abri terminal y pone :
sudo gedit /boot/grub/menu.lst
te va a pedir el password del root, y una vez lo pongas se va abrir con el gedit el archivo menu.lst
vas al final del archivo y vas a ver mas o menos lo siguiente:

Ahora lo que tenes que hacer es poner tu Sistema operativo primero en la lista, como hago en este caso con windows.

Una vez termines la modificacion pones guardar y LISTO ya tenes tu SO primero en la lista
