Las Mejores Salchipapas Que Puedas Probar...

"LAS RECETAS DE LAYLITA" Trato de preparar comida saludable la mayor parte del tiempo, pero de vez en cuando me dan ganas de comer algo no tan saludable como estas deliciosas salchipapas: patitas fritas con salchicha y cubiertas de salsa rosada. Todo empezó cuando estaba en el colegio, había un pequeño lugar llamado Soda Bar que vendía las salchipapas más ricas de Loja, quedaba justo en el centro de la ciudad; qué más puedo decir de estas deliciosas salchipapas? Eran una completa adicción, tenia amigas que dejaban sus joyas en prendas a cambio de estas papas fritas, las servían en vasos de plástico y aunque habían muchos otros lugares que vendían salchipapas, las del Soda eran las mejores y más populares debido a la deliciosa salsa que les ponían, era una salsa rosada tan rica que todos pedían las papas con doble salsa y al final cuando ya te habías terminado todas las papas te tomabas hasta la última gota de salsa. Descubrir el secreto de esta salsa se convirtió por algún tiempo en una obsesión y a pesar de que la salsa que preparo para esta salchipapas es deliciosa, siento que aún le falta “algo” para ser idéntica a aquella salsa del Soda, y a veces puedo casi probar aquel ingrediente secreto pero siempre se me escapa, así que por ahora he decidido simplemente disfrutar de lo tengo y quizás algún día descubra ese secreto ingrediente. Había otro restaurante que vale mencionar porque también tenían excelentes salchipapas, y no recuerdo el nombre del lugar (a pesar de que quedaba al lado de mi colegio), pero le decíamos las papas de la Gorda, servían las papas fritas con curtido de tomate y cebolla, lo cual también incorpore a mis salchipapas, por ultimo recomiendo comer estas salchipapas con un buen aji y una cerveza bien fría. Y si alguien sabe lo que le falta a mi salsa rosada para ser igual a la del Soda Bar por favor me lo dicen... Ingredientes: Salsa rosada del Soda (rinde aproximadamente 2 ½ tazas de salsa) 1 huevo 2 cucharadas de cebolla blanca picada 4 cucharadas de jugo de limón ¾ a 1 taza de aceite de girasol 1 cucharada de leche 8 tomates (tipo Roma), pelados, sin semillas y picados Sal al gusto Opcional – 1 a 2 ajies picantes Salchipapas (para 4 personas – 1 papa y salchicha por persona) 4 papas de buen tamaño (tipo Russet), peladas y cortadas finaso gruesas de acuerdo a su gusto 4 salchichas, enteras o cortadas por la mitad, con un corte de cruz en las puntas Aceite para freír Sal al gusto Acompañantes – Salsa rosada del Soda, curtido de cebolla y tomate, aji Preparación: Salsa Rosada del Soda 1) Prepare una mayonesa básica licuando el huevo, cebolla picada, y el jugo de limón hasta que las cebollas estén trituradas. 2) Continúe licuando y agregue el aceite lentamente hasta que la mayonesa se vuelva espesa, pero sin dejar que llegue a ser demasiado espesa, la consistencia debe ser casi como una salsa. 3) Agregue sal al gusto y la leche, la cual ayuda a que la mayonesa mantenga ese color blanco. 4) Transfiera la mayor parte de la mayonesa a un bol, y ponga los tomates picados en la licuadora, junto con los ajies si los desea usar. 5) Licue los tomates hasta obtener un puré, vuelva a poner la mayonesa del bol y licúelo con el puré de tomate hasta que todo esté bien mezclado, pruebe y rectifique la sal. 6) Guarde la salsa en la refrigeradora hasta la hora de servirla. Salchipapas 1) Remoje las papas cortadas en agua fría durante media hora. 2) Escurra el agua y seque muy bien las papas, mientras calienta el aceite para freír las papas, la temperatura del aceite debe estar a 325 F. 3) Añada las papas al aceite hirviendo y cocine hasta que estén tiernas, pero no doradas, aproximadamente unos 10 minutos dependiendo de la grosura de las papas. 4) Saque las papas del aceite y póngalas encima de toallas de papel para escurrir el aceite, déjelas enfriar por lo menos durante una hora. 5) Vuelva a calentar el aceite, esta vez la temperatura ideal es 375 F, y agregue las papas al aceite hirviendo, fríalas hasta que este doradas y crujientes, aproximadamente unos 5 minutos. 6) Fría las salchichas en el mismo aceite o por separado. 7) Ponga las papas y salchichas sobre toallas de papel para quitar la grasa y sirva inmediatamente acompañados con la salsa rosada y el curtido de cebolla con tomate.
